Soup it up!

By special request for Angie:

Avgolemono Soup*

Ingredients
4 cups chicken broth
4 eggs
4 tbsp lemon juice
1/4 to 1/3 cup rice

Heat chicken broth and rice to boiling. In a large mixing bowl, beat eggs with a wire whisk until light, and beat in the lemon juice. Once rice is done, gradually stir half the broth into the mixing bowl, whisking constantly. Return contents to saucepan and place over low heat until soup is thickened, stirring frequently. Garnish with lemon slices.

Yum! I should have asked you for this a week ago when I was sick and really wanted it. Actually I really just wanted you to make it for me so I guess I didn't really need the recipe. Thanks!
